
If you ask me, smashed tacos are one viral recipe that never fails! And these chicken Caesar smashed tacos might be my favourite. Perfectly cooked chicken topped with a creamy, homemade Greek yogurt Caesar dressing – it’s the ultimate combo! While you can certainly use a store-bought dressing, this Greek yogurt version is beyond simple to whip up. The key is lots of Parmesan and a little bit of anchovy paste to give it that traditional flavour.
I prefer flour tortillas as they are easier to work with when adding the chicken mixture, but feel free to use corn tortillas if you prefer. These chicken Caesar smashed tacos are a 30-minute dinner that you need to try this week!

Greek Yogurt Caesar Dressing:

Preheat oven to 400°F. Add bacon to a parchment-lined baking sheet and bake for 15 minutes or until desired doneness.

Combine ground chicken, panko, Italian seasonings, garlic powder, salt and pepper. Mix well and divide the mixture into 8 equal portions.

Spread each chicken round onto a flour tortilla, ensuring the mixture is evenly spread.

Lightly oil a skillet over medium heat, and add tortilla, chicken side down. Cook for 2-3 minutes. Flip and cook for an additional 2-3.
Repeat for all tortillas.

Whisk together all the dressing ingredients except for Parmesan. Ensure anchovy paste is well mixed. Finally, fold in Parmesan until well combined. Refrigerate until ready to use. If dressing is too thick, add 1 tablespoon of water.

Mix romaine lettuce with dressing as desired.

Top each cooked chicken tortilla with Caesar salad, bacon bites and extra Parmesan!
