If you’ve been on social media lately, you’ve probably scrolled past the viral crispy rice salad. And this is my version, featuring golden rice, crunchy vegetables and a glossy ginger dressing that always looks like a restaurant order. Well, this is it, but on a budget. You don’t need takeout prices or fancy ingredients to pull off viral-level flavour at home. With crispy rice, caramelized tofu and a punchy dressing, this bowl proves that hype doesn’t have to cost a lot of money!
This salad looks like it came straight off a restaurant menu, but the whole thing costs less than $12 to make; that’s under $2 a serving. Swap in frozen edamame or bulk-bin cashews to save even more. A little planning = big flavour for a fraction of the price.

On two baking sheets, spread rice and tofu separately. Add oil, teriyaki sauce, chili oil, and soy sauce. Toss well, then bake at 375°F for 20 minutes until golden and crisp.

In a blender, combine soy sauce, sesame oil, olive oil, ginger, vinegar, garlic, lime juice and honey until smooth.

In a large bowl, layer salad base ingredients. Top with crispy rice and tofu. Drizzle generously with ginger sauce. Finish with extra fried onions or sesame seeds for an extra touch of elegance.
