
Lasagna is the ultimate comfort food, and this recipe turns the classic cheesy baked dish into a super-easy weeknight soup. It has all the same components as a lasagna, but with significantly less time and effort.
This recipe is inspired by a classic, simple lasagna, but you can easily customize it to your tastes. Try substituting ground chicken or sausage for ground beef, or load it up with your favourite veggies, such as spinach and kale, which both work beautifully in this soup.

In a large pot over medium-high heat, drizzle in olive oil. Add in onions and garlic, sautéing for 2-3 minutes or until softened.

Add in ground beef, breaking up with the edge of your spatula, sautéing until cooked through, about 10 minutes.

Pour in marinara sauce and beef broth, cover and bring to a boil.

Once boiling, add in broken lasagna oven-ready lasagna noodles. Continue to simmer uncovered for 15 minutes or until noodles are al dente, then remove from heat.

To serve, sprinkle grated mozzarella in soup bowl, then top with soup. Garnish with fresh basil, grated parmesan, and serve.
