
Apparently, Eva Longoria’s go-to breakfast is breakfast tacos, so obviously, I had to try them out myself! She loves to make homemade tortillas (because they smell so good), with the addition of potatoes (yes, please!). I can understand why these are such a great and easy breakfast option! With two make-ahead options (the tortillas and the potatoes), these can be made in a flash.
I made these breakfast tacos with a mix of eggs and egg whites. For the potatoes, I added onions for extra flavour and a little melted cheese to make the perfect combo. As for the tortillas, I can see why Eva insists on making them homemade each time—it’s honestly so easy and so much better than store-bought. You’ll need to allocate 15 minutes for the dough to rest, but the rest takes minutes.

For The Tortillas:

For the tortillas: Whisk together flour and salt.
Add in melted butter and mix together with a spoon until crumbly. Slowly add water and mix until a ball forms. Continue to knead until the dough is no longer sticky and is smooth. Cover in a bowl and let rest for 15 minutes or up to an hour. Divide dough into 8 parts and roll out into circles, ensuring the dough is very thin.

Cook on a cast iron or heavy skillet for 30-60 seconds per side until cooked through. Set aside in a tea towel, stacking tortillas together.
For the potatoes: Add oil to a medium saucepan and once cook onions till translucent. Add in cooked potatoes and toss to combine. Pour in seasonings and continue to stir. Let potatoes cook until there are some crispy parts, 10-15 minutes. Set aside

For the eggs: Combine eggs with egg whites. Add milk and whisk to combine. Season with salt and pepper.
Add butter or oil to the skillet and scramble eggs as desired.
