In a bowl, whisk together the dry ingredients.

In a separate bowl, cream butter and brown sugar until fluffy. Add egg, vanilla, and lime zest. Mix well.
Combine wet and dry until a soft dough forms.
Divide the dough into 12 equal balls. Place on a baking sheet.

Bake for 10 minutes. Remove from oven, and using a spoon or small bowl, make an indent in the middle of the cookie. Bake for 1 to 2 more minutes.

Remove from the oven, and let cookies cool completely.
While the cookies cool, make the filling. Mix all the ingredients until smooth.

Pipe or spoon into cooled cookies. Garnish with a slice of lime and more lime zest.
