
Not everyone is as obsessed with leftovers as I am (wild, I know), so if you’re looking to spice up your roast lamb dinner leftovers, making gyros is an easy and delicious way to totally revamp them. We crisp up the lamb meat in a skillet to replicate the crispy edges achieved on a vertical spit, and make sure to throw in a few fries for authenticity’s sake.
While I did include measurements for the tzatziki, please know I encourage you to measure with your heart, as I’m a firm believer that there’s no such thing as too much tzatziki.
Give these leftover lamb leg gyros a try and feel yourself getting transported to the sunny beaches of Greece!

Cook the frozen fries in the oven or air fryer as per the package instructions, then set aside until assembly.
Slice leftover lamb into thin strips and pan fry on high heat with olive oil until crispy.
Warm the pitas by covering them individually in a slightly damp paper towel on a microwave-safe plate and microwaving them for 30 seconds. After that, wrap in tinfoil to keep them warm.
Assemble the gyros with a tzatziki, tomatoes, onion, gyro meat, fries, lettuce, feta and a sprinkle of oregano.

Serve immediately and enjoy!
