ingredients

kg watermelon flesh, seeded and cubed

mL simple syrup

g preserved lime juice (recipe above) or more fresh lime juice
30
g lime juice
1
lime, zested
Tajin, for garnish

Step 1

Blend the watermelon until smooth. Strain the mixture through a fine mesh strainer into a large bowl.

Step 2

Stir in the remaining ingredients, except the tajin. Transfer the mixture to a 9×13 metal baking pan and transfer to the freezer, raking the mixture every two hours with a fork until the mixture is thoroughly frozen into a flaky slush consistency, about 8 to 10 hours.

Step 3

Once ready to serve, spoon into serving dishes and dust with a little tajin.
